Split peas are produced by harvesting the peapods when they are at maturity and then drying the peas. Once the peas are dry and the skins are removed they split naturally. Split peas are a great nutrient dense legume option. They are a great source of vitamins A and B, potassium and magnesium. They are rich in protein, iron and zinc.
Split peas are great to use in soups for an added nutrition boost and are also popular in Indian inspired dishes like Dhal.
